Once the agave reaches maturity a quiote (flowering stalk) rises from the heart of the plant, indicating that is ready to be harvested. The leaves are shaved off and the hearts of the agave (piñas) are taken to the palenque (distillery) to be roasted.

Once the piñas arrive at the palenque, a large fire is built in an underground pit using mesquite and encino woods native to this area. This fire heats large volcanic rocks that line the pit and act as an oven, roasting the piñas for up to six days.

The newly baked agaves are then put into a circular stone pit, then crushed using a solar powered one ton stone wheel called Tahona.

The crushed agaves are then placed in large open fermentation vats. Wild yeast in the air kick starts the fermentation process, converting the sugars into alcohol.

The liquid and fibers are then double distilled using copper pot stills. Silencio uses materials sourced from Mexico. The entire process from harvest to bottle takes roughly three to four weeks.

Mezcal El Silencio goes beyond the bottle, transforming the ordinary and disrupting the status quo.

After surveying the natural, spiritual, and cultural essence of the area, a plan was formulated for the Casa Silencio project and its relation to its immediate surroundings, using historical and ancestral as well as contemporary strategies. A philosophy was thus conceived in order to recover the devastated ecosystem and to carefully maintain a balance between sacred and ecological conventions.

Casa Silencio is an autonomous entity that emerges from the earth and integrates with the landscape. Its walls are fashioned using a technique called Tapial, or "rammed earth”. This construction system is traditional, native to the area, observed in regional pre-columbian sites: Monte Alban, Yagul, and neighboring Mitla. Today’s formwork is metallic, modular, and reusable which makes the building process efficient and with little-to-no waste. The shuttering system is a modern contribution to an ancestral construction process. This modulation is used according to the premise of the golden ratio system that guided the entire project.

Casa Silencio is architecture behind closed doors, meaning that nothing was left over, nothing left the construction as waste. Each element of the project was reused and applied to another function. The metallic formwork was also reutilized, to avoid wasted wood left over after conventional construction.

Casa Silencio's interior design is based on the values inherited from local tradition, applied with a contemporary perspective. The walls are made from the earth itself: Stonework is used in the foundations and visible elements, while the pillars and polished floors are cast in concrete. Repurposed wood is used for the ceilings, mullions and the furniture; which is treated for protection from insects. Many other furnishings were obtained from restored antiquities. Traditional clay tiles, produced in the region, lay on the rooftops. Finally, two towers accompany the property which utilize recycled mezcal bottles to create various textures and transparencies.

The earth used in the walls was reclaimed from the excavation of the foundation itself. All the platforms used for elevation of the different levels were recycled in the ceilings, while the reinforcement beams were used to build much of the furniture. It is a project that makes use of various climactic elements, the very nature of its environment, through both active and passive energy systems. Thus, it is sustainable from every point of view. During the day the thick walls keep the heat outside by absorbing it, while at night they release it to warm the interior: cool in summer and warm in winter.

The use of the natural light during the day reduces the dependence on artificial lighting, whose supply system is in any case powered by solar panels for all areas. Cross ventilation is a passive system that makes the use of air conditioning unnecessary.

The design of the ovens to cook the agave hearts has a structure that utilizes heat to reduce the use of firewood. Water recollection is even used in the process of producing mezcal in its different phases. A system of recirculation and purification of water recovers the liquid used in the distillation process, in order to reuse it. Cisterns store potable water, and sewage treatment uses bio-digesters. All of these ecological strategies make Casa Silencio an efficient and energy independent factory.

Casa Silencio is a ceremonial concept of expression and connection with nature. It is a space to live an aesthetic experience through the five senses: the touch of the furniture made of wood or volcanic rock, the scent of the earthen walls, the taste of an exquisite mezcal while listening to the sounds of nature, observing the artwork and designs, a recovery of the human perspective against a timeless backdrop.
